- 2 lb chicken thighs boneless, skinless
- 1 yellow onion diced
- 4 garlic cloves minced
- 13.5 oz coconut milk light or full fat
- 6 oz tomato paste
- ½ Tbsp ghee, butter, or vegan butter
- 2 tsp ground cumin
- 1 tsp ground ginger
- 1 tsp ground coriander
- 1 tsp curry powder
- 3/4 tsp sea salt
- 2 limes juice of (about 1/3 cup)
Place chicken in the bottom of 6 qt slow cooker. Add all other ingredients and stir.
Cook on low 3.5 hours.
If desired, shred chicken.
