Slow Cooker Curry Chicken

- 2 lb chicken thighs boneless, skinless
- 1 yellow onion ~200 g, sliced thin
- 6 garlic cloves minced
- 1 Tbsp minced ginger
- 2 Tbsp curry powder
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp sea salt
- 13.5 oz coconut milk light
- 8 oz frozen peas
- cooking spray
Spray slow cooker with cooking spray.
Place chicken in bottom of slow cooker.
Add onion, garlic, ginger, spices, and salt and flip the chicken pieces to coat them.
Cook on low for 3 hours.
Place peas in a microwavable bowl and cover with water. Microwave for 1 minute. Drain.
Add coconut milk and peas and cook for 30 more minutes.
Remove chicken and shred if desired.
