Slow Cooker Curry Chicken

  • Slow Cooker (6 qt)

Ingredients

  • 2 lb chicken thighs boneless, skinless
  • 1 yellow onion ~200 g, sliced thin
  • 6 garlic cloves minced
  • 1 Tbsp minced ginger
  • 2 Tbsp curry powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp sea salt
  • 13.5 oz coconut milk light
  • 8 oz frozen peas
  • cooking spray

Instructions

  • Spray slow cooker with cooking spray.
  • Place chicken in bottom of slow cooker.
  • Add onion, garlic, ginger, spices, and salt and flip the chicken pieces to coat them.
  • Cook on low for 3 hours.
  • Place peas in a microwavable bowl and cover with water. Microwave for 1 minute. Drain.
  • Add coconut milk and peas and cook for 30 more minutes.
  • Remove chicken and shred if desired.
