If I have to read one more “healthy” butter chicken recipe that says, “tee hee, there’s no butter! It’s just called that because of the buttery texture/flavor!” I’m gonna scream. Yes, this recipe contains butter. You can use ghee, regular butter, or even a butter substitute. (We use Earth Balance.)
The prep required for this recipe includes dicing an onion, mincing garlic, and juicing two limes. I was actually surprised at how time consuming the juicing was. This is why I time myself!
Once you’ve got everything prepped, dump the chicken in, followed by everything else, and stir. Set to cook on low for 3.5 hours. (Cooking time may vary – please ensure your chicken cooks to a safe temperature of 165 F.)
After your chicken is cooked, remove the chicken and shred if desired. Serve over rice for a delicious dinner!
Slow Cooker Butter Chicken

- Slow Cooker (6 qt)
Ingredients
- 2 lb chicken thighs boneless, skinless
- 1 yellow onion diced
- 4 garlic cloves minced
- 13.5 oz coconut milk light or full fat
- 6 oz tomato paste
- ½ Tbsp ghee, butter, or vegan butter
- 2 tsp ground cumin
- 1 tsp ground ginger
- 1 tsp ground coriander
- 1 tsp curry powder
- 3/4 tsp sea salt
- 2 limes juice of (about 1/3 cup)
Instructions
- Place chicken in the bottom of 6 qt slow cooker. Add all other ingredients and stir.
- Cook on low 3.5 hours.
- If desired, shred chicken.
