Instant Pot Creamy Garlic Chicken & Pasta

Instant Pot Creamy Garlic Chicken

Equipment

  • Instant Pot (3qt)

Ingredients

  • 1.5 frozen chicken breasts (~1.25 lb)
  • 8 oz elbow pasta
  • 1 onion, diced
  • 2 tbsp minced garlic
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp paprika
  • 2 tsp Italian seasoning
  • salt & pepper to taste
  • ¼ tsp cayenne (optional)
  • 2 cups chicken stock (no salt added)
  • cups half and half or milk/non-dairy milk
  • ½ cup shredded parmesan

Instructions

  • Slice the frozen chicken breasts in half and arrange in the bottom of the instant pot.
  • Add all seasonings.
  • Add elbow pasta, onion, and garlic.
  • Add chicken stock. Ensure everything is covered in liquid. (Add more water if not.)
  • Cook on high pressure for 10 minutes (reduce time to 7-8 min if chicken breasts already thawed).
  • Quick release when finished.
  • Remove chicken, shred, and return to pot.
  • Stir in milk and cheese.
  • Split into 4 meal prep containers.
