Instant Pot Creamy Garlic Chicken

Equipment
- Instant Pot (3qt)
Ingredients
- 1.5 frozen chicken breasts (~1.25 lb)
- 8 oz elbow pasta
- 1 onion, diced
- 2 tbsp minced garlic
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp paprika
- 2 tsp Italian seasoning
- salt & pepper to taste
- ¼ tsp cayenne (optional)
- 2 cups chicken stock (no salt added)
- ⅜ cups half and half or milk/non-dairy milk
- ½ cup shredded parmesan
Instructions
- Slice the frozen chicken breasts in half and arrange in the bottom of the instant pot.
- Add all seasonings.
- Add elbow pasta, onion, and garlic.
- Add chicken stock. Ensure everything is covered in liquid. (Add more water if not.)
- Cook on high pressure for 10 minutes (reduce time to 7-8 min if chicken breasts already thawed).
- Quick release when finished.
- Remove chicken, shred, and return to pot.
- Stir in milk and cheese.
- Split into 4 meal prep containers.
